Curried Butternut Squash Soup

Day after day of cold weather leaves me looking for some warm comfort food.  I’ve found there is nothing better than a steaming bowl of creamy soup with a spicy kick on a chilly winters day.  This Butternut Soup has a hint of sweetness blended with the subtle spice of curry that will warm you right up! 

Curried Butternut Squash Soup

Saute until browned in large pot:
1 Yellow Bell Pepper-Diced
1 Medium Sweet Onion-Diced
3 Cloves Garlic-Chopped Fine
2 Carrots-Diced
Add:
1 Medium Butternut Squash Peeled and Cubed
2 tsp. Curry Powder
1/2 tsp. Black Pepper
2 TBSP Sugar Free Apricot Jelly (you can use orange marmalade or applesauce as substitute)
32 oz. Box Vegetable Broth
1 Can Light Coconut Milk
1 Cup Uncooked Rice (I prefer brown or wild)
Bring to a boil, reduce heat and simmer for approximately 45 minutes or until rice and squash fully cooked.  With potato masher, smooth butternut squash until soup reaches desired consistency.
