Potato & Onion Pierogies
Another quick and easy weeknight meal is delicious potato & onion pierogies. 
 (Not completely vegan due to small amount of egg content in dough. This is the compromise when you buy frozen processed food instead of making your own.  I plan on trying to make my own pierogies and freezing for future use but this comes close to our dietary requirements with only 5mg cholesterol per serving.)
Ingredients:
Frozen Potato & Onion Pierogies
Sliced Onion
Sliced Red Bell Pepper
Baby Bella Mushrooms
Simply saute all ingredients together in pan until cooked thru. I prefer to use a little water to saute instead of oil or butter, this keeps your fat content down.  Yum Yum!
