Quick and Easy Vegetarian Meals for Busy Moms

Vegan Pad Thai

Vegan Pad Thai
When you need a quick and easy dinner, this one is a cinch!
A Taste of Thai Pad Thai Sauce
Rice Noodles (1/2 package equals approx. 3 servings)
1 Can Pineapple Chunks or 2 Cups Fresh Pineapple
2 Cups Steamed Broccoli
Green Onion (garnish)
Cilantro (garnish)
1/2 Cup Raw Cashews
Red Pepper Flakes (garnish)
Soak the rice noodles in hot water for approximately 10 minutes until softened. 
While waiting on noodles, steam 2 cups of chopped broccoli. ( I prefer to do this in the microwave-place in bowl with water, cover and cook for about 8 minutes until softened.) 
fresh pineapple or open can of pineapple chunk
raw cashews (approx. 1/2 Cup)
green onion and cilantro for garnish
Pad Thai Sauce
Garnish with green onion, cilantro and crushed red pepper. Enjoy!
