Quick and Easy Vegetarian Meals for Busy Moms

Must Have Resources!

on February 6, 2012
There are some great cookbooks and resources available online that are valuable resources in starting and continuing a vegan lifestyle.  You could spend hours and hours looking thru all the information that is available (I know, I have!) This is why I want to share some of my favorites with you.

This is one of the very first books I bought and love! Lots of great beginner recipes in this one.  Not vegan, but alot of the recipes are or can be converted to vegan. (use soy rather than dairy, eliminate cheese or use vegan substitute).

This book was loaned to me by a friend and found it has alot of more adventurous recipes. A great resource for when you start branching out into a broader range of foods!

This one is awesome for those working days…Get it ready the night before, throw it on in the morning and viola…Dinner is ready when you get home!  Love all the oatmeal options in this one too!!!

I believe Lindsay has 3 cookbooks now based off of her inspiring blog: Happy Herbivore.  I have to admit that I do not own any of the cookbooks but do follow her blog and she has set up weekly mealplans you can download for free (asks for donations) with links to recipes.  I have found her recipes and blog very useful.  Check it out for yourself! http://happyherbivore.com/
